Sensory impressions
Intense ruby with garnet reflections, has a broad, complex and refined nose that suggests hints of cherries, marasca and dried figs together with a strong note of cocoa, date, anise, white pepper and spices. The mouthfeel is rich, powerful, but at the same time crisp and agile, characterized by the typical minerality, which gives a long and pleasant persistence.
Recommended food pairings
A few years of cellaring make it the ideal complement for the most luscious meat and seasoned dishes, such as hare “à la Royale” and roast snipe. At a riper age, it is best savoured with some aged cheese, such as Castelmagno or Bitto.
